Ingredients
  

For the Brownies:
  • 2 large eggs
  • 1/2 cup salted butter melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 15 regular mint Oreo cookies chopped
For the Frosting:
  • 4 ounces cream cheese softened
  • 1/2 cup salted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Green food coloring gel preferred
  • 5 regular mint Oreo cookies crushed for decoration
  • 2 teaspoons red heart sprinkles

Method
 

Directions:
  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: Line a 9x9 inch baking pan with parchment paper, greasing it lightly with butter.
  3. Step 3: In a large mixing bowl, whisk melted butter, brown sugar, white sugar, and vanilla until combined. Add eggs one at a time, mixing well.
  4. Step 4: In a separate bowl, sift flour, cocoa powder, and salt. Gradually add to the wet ingredients, mixing gently.
  5. Step 5: Fold in chopped mint Oreo cookies into the brownie batter.
  6. Step 6: Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out with moist crumbs.
  7. Step 7: In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until combined. Add green food coloring to desired shade.
  8. Step 8: Once brownies are cool, spread the green frosting evenly over the top.
  9. Step 9: Sprinkle crushed mint Oreo cookies and red heart sprinkles on top for decoration.
  10. Step 10: Lift brownies out using parchment overhang, slice into squares, and serve!
