- Step 1: Preheat your oven to 350°F (175°C) for even baking.
- Step 2: Line a 9x9 inch baking pan with parchment paper, greasing it lightly with butter.
- Step 3: In a large mixing bowl, whisk melted butter, brown sugar, white sugar, and vanilla until combined. Add eggs one at a time, mixing well.
- Step 4: In a separate bowl, sift flour, cocoa powder, and salt. Gradually add to the wet ingredients, mixing gently.
- Step 5: Fold in chopped mint Oreo cookies into the brownie batter.
- Step 6: Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out with moist crumbs.
- Step 7: In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until combined. Add green food coloring to desired shade.
- Step 8: Once brownies are cool, spread the green frosting evenly over the top.
- Step 9: Sprinkle crushed mint Oreo cookies and red heart sprinkles on top for decoration.
- Step 10: Lift brownies out using parchment overhang, slice into squares, and serve!
