  1. Fill a microwave-safe bowl with enough water to completely submerge the eggs. Add 1 teaspoon of salt and a pinch of baking soda.
  2. Gently place the 2 large eggs into the bowl of water, ensuring they are fully submerged.
  3. Cover the bowl with a microwave-safe lid or plate to trap steam.
  4. Microwave the eggs on high for about 6-8 minutes, starting with 6 minutes.
  5. Once the timer goes off, carefully remove the bowl from the microwave and let the eggs sit in the hot water for an additional 5 minutes.
  6. Prepare an ice bath by filling a bowl with cold water and ice. Transfer the eggs to the ice bath to stop the cooking process.
  7. After a few minutes in the ice bath, gently tap the eggs on a hard surface to crack the shell, then peel under running water.

Notes

  • Feel free to add herbs or spices to the water for extra flavor.
  • A splash of vinegar can help with the peeling process.
  • Store leftover eggs in their shells for up to a week.
