Method
 

  1. Begin by rinsing the shredded potatoes under cold water to remove excess starch. Squeeze out moisture using a clean kitchen towel.
  2. In a large mixing bowl, combine the drained shredded potatoes, minced garlic, kosher salt, black pepper, vegetable oil, and eggs. Stir until well combined.
  3. Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with vegetable oil.
  4. Scoop a portion of the potato mixture into the center of the waffle iron, spreading it evenly. Cook for 5-7 minutes until golden brown and crispy.
  5. Carefully remove the waffles from the iron and serve immediately. Top with your favorite condiments if desired.
