Ingredients
  

  • 1 lb boneless, skinless chicken breasts Fresh or frozen, thawed if frozen
  • 1/2 cup Parmesan cheese Grated or shredded
  • 1/4 cup cold water
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 cup panko breadcrumbs

  • Mixing bowls

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Cut the chicken into bite-sized pieces.
  4. In a mixing bowl, combine the cold water, 1/4 cup Parmesan cheese, salt, and pepper. Whisk until well combined.
  5. Dip each piece of chicken in the wet mixture, letting excess liquid drip off.
  6. In a separate bowl, mix panko breadcrumbs with the remaining 1/4 cup Parmesan cheese, then coat the chicken pieces.
  7. Place the coated chicken pieces on the prepared baking sheet in a single layer.
  8. Bake for 15-20 minutes or until cooked through and golden brown.
  9. Let cool for a few minutes, then serve with your favorite dipping sauces.
