  • 1 and 3/4 cups whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup coconut sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 and 1/3 cups ripe mashed banana (about 3 medium bananas)
  • 1/3 cup unsweetened applesauce
  • 1/4 cup coconut oil (melted)
  • 1/3 cup dark chocolate chips (plus more if desired)

Method
 

  1. Start by preheating your oven to 350°F (175°C). This step is crucial for ensuring that your muffins rise beautifully.
  2. Line a muffin tin with parchment paper liners or grease it lightly with coconut oil to prevent sticking.
  3. In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt until well combined.
  4. In another bowl, mix the ripe mashed bananas, applesauce, and melted coconut oil until smooth.
  5. Pour the wet mixture into the dry ingredients. Gently fold the mixture together using a spatula until just combined.
  6. Fold in the dark chocolate chips. If you’re a chocolate lover, feel free to add more chips for an extra decadent treat.
  7. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Make sure your bananas are very ripe for the best sweetness and flavor.
  • Feel free to substitute the coconut sugar with brown sugar if that’s what you have on hand.
  • These muffins can be made vegan by substituting the eggs with flax eggs if you wish to experiment further.
