Ingredients
  

For the Filling:
  • 1 cup creamy peanut butter
  • 2 tablespoons butter softened
  • 2 tablespoons powdered sugar
  • 2 teaspoons vanilla extract
For the Dough:
  • 3.5 cups flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 1.5 sticks cold butter cut into 1/2 inch pieces
  • 0.5 cup ice cold water
For the Glaze:
  • 2 cups powdered sugar
  • 2 tablespoons meringue powder
  • 1 tablespoon vanilla extract for the glaze
  • 2 tablespoons cocoa powder for the glaze
  • 3-6 tablespoons water to achieve desired glaze consistency
  • 2 ounces dark or milk chocolate melted
  • 1 tablespoon creamy peanut butter for the glaze
  • 0.25 cup creamy peanut butter warmed for the filling
  • Coarse salt or sugar for sprinkling on top

Method
 

Instructions:
  1. In a large mixing bowl, combine the flour, cocoa powder, sugar, and salt. Whisk them together until well blended. Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  2. Gradually add the ice-cold water to the mixture, stirring until the dough comes together. Be careful not to overmix. Once combined, form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. In a medium bowl, mix together the creamy peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  4. After chilling the dough, preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the dough to about 1/8 inch thick. Use a knife or pastry cutter to cut the dough into rectangles (about 3x4 inches).
  5. On half of the rectangles, place a generous tablespoon of the peanut butter filling in the center. Be sure to leave space around the edges for sealing. Place another rectangle on top and press down the edges with a fork to seal.
  6. Transfer the assembled Pop-Tarts to a lined baking sheet. Bake for 20-25 minutes, or until they are firm and slightly golden. Remove from the oven and let cool completely.
  7. In a mixing bowl, whisk together the powdered sugar, meringue powder, vanilla extract, cocoa powder, and 3-6 tablespoons of water until you achieve a smooth, spreadable consistency. Stir in the melted chocolate and creamy peanut butter. Adjust the water if necessary.
  8. Once the Pop-Tarts are cool, spread the chocolate glaze generously over the top of each. Sprinkle with coarse salt or sugar for an added touch of sweetness.
  9. Let the glaze set for a few minutes before serving. These Homemade Chocolate Peanut Butter Fudge Pop-Tarts are best enjoyed fresh, but they can also be stored for later!
