Ingredients
  

For the Crepes:
  • 3 tablespoons unsalted butter divided
  • 3 large eggs
  • 1 cup cake flour or whole wheat pastry flour
  • 1 cup milk any variety
  • ½ cup seltzer water
  • 1 tablespoon maple syrup a hint of sweetness
  • 1 teaspoon vanilla enhances the flavor
  • 1 dash salt balances the sweetness

Method
 

Instructions:
  1. In a mixing bowl, melt 2 tablespoons of the unsalted butter and let it cool slightly. Add the eggs, milk, seltzer water, maple syrup, vanilla, and a dash of salt to the bowl. Whisk together until well combined. Gradually add the flour and mix until the batter is smooth. Allow the batter to rest for about 30 minutes.
  2. Place your non-stick skillet or crepe pan over medium heat. Add the remaining tablespoon of unsalted butter and swirl it around until the pan is evenly coated.
  3. Using a ladle or measuring cup, pour about ¼ cup of batter into the center of the pan. Quickly swirl the pan in a circular motion to spread the batter evenly into a thin layer. Cook for about 1-2 minutes, or until the edges begin to lift and the surface is set.
  4. Carefully slide a spatula under the crepe and flip it over. Cook for an additional 30 seconds to 1 minute until lightly golden. Transfer the cooked crepe to a plate and cover it with a clean kitchen towel to keep warm. Repeat the process with the remaining batter.
  5. Fill your crepes with your favorite fillings, whether sweet or savory, and enjoy them warm!
