Ingredients

  • 2 pounds boneless, skinless chicken breast or chicken thighs
  • 2 tablespoons sesame oil divided
  • 2 tablespoons lime juice
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • ¾ cup chili crisp
  • ½ cup honey
  • 1 tablespoon lime juice
  • 3 green onions diced and thinly sliced

Equipment

  • Large mixing bowl
  • Skillet or frying pan
  • Measuring cups and spoons
  • Spatula
  • Serving platter

Method

  1. Start by cutting your chicken into bite-sized pieces. You can use either boneless, skinless chicken breasts or thighs, depending on your preference. Place the chicken pieces into a large mixing bowl.
  2. In the same bowl, add 1 tablespoon of sesame oil, 2 tablespoons of lime juice, cornstarch, salt, black pepper, and garlic powder. Mix everything well to ensure the chicken is evenly coated. Let it marinate for at least 15 minutes, allowing the flavors to infuse.
  3. Heat the remaining tablespoon of sesame oil in a skillet over medium-high heat. Once hot, add the marinated chicken pieces to the skillet. Cook for about 5-7 minutes, flipping occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, lower the heat and add the chili crisp and honey. Stir to combine, allowing the mixture to heat through for about 2-3 minutes. Add in 1 tablespoon of lime juice for that extra zing. The glaze should be slightly bubbly and fragrant.
  5. Return the cooked chicken bites to the skillet and toss them in the honey chili glaze. Make sure each piece is well-coated in this delicious sticky goodness. Cook for an additional minute to allow the flavors to meld.
  6. Transfer the glazed chicken bites to a serving platter. Top with diced green onions for a pop of color and freshness. Now, it’s time to dig in!

Notes

  • Do not overcrowd the skillet while frying the chicken to avoid steaming.
  • Ensure the oil is hot enough before adding the chicken for a golden-brown exterior.
  • Adjust the amount of chili crisp according to your spice tolerance.
  • Don’t skip the marinating step; it’s crucial for flavor and tenderness.
