Cooking Instructions:
- Step 1: Preheat the oven to 400°F (200°C) for caramelizing the carrots.
- Step 2: Peel and slice the carrots diagonally into pieces about 1/2 inch thick.
- Step 3: In a large mixing bowl, combine the sliced carrots with olive oil, melted butter, honey, salt, and black pepper. Toss until evenly coated.
- Step 4: Transfer the carrots to a baking sheet, spreading them out in a single layer.
- Step 5: Roast the carrots in the oven for about 25-30 minutes, tossing halfway through.
- Step 6: Once done, sprinkle with freshly chopped parsley and toss gently before serving.

- For a vegan version, replace butter with coconut oil or plant-based butter.
