Ingredients
  

For the Carrots:
  • 2 lbs carrots peeled and sliced diagonally about 1/2" thick
  • 1 tbsp extra virgin olive oil
  • 1 tbsp melted butter
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp freshly chopped parsley

Method
 

Cooking Instructions:
  1. Step 1: Preheat the oven to 400°F (200°C) for caramelizing the carrots.
  2. Step 2: Peel and slice the carrots diagonally into pieces about 1/2 inch thick.
  3. Step 3: In a large mixing bowl, combine the sliced carrots with olive oil, melted butter, honey, salt, and black pepper. Toss until evenly coated.
  4. Step 4: Transfer the carrots to a baking sheet, spreading them out in a single layer.
  5. Step 5: Roast the carrots in the oven for about 25-30 minutes, tossing halfway through.
  6. Step 6: Once done, sprinkle with freshly chopped parsley and toss gently before serving.

Notes

  • For a vegan version, replace butter with coconut oil or plant-based butter.
  • Maple syrup can be used instead of honey for a plant-based sweetener.
  • Store leftovers in an airtight container for up to 3 days.
