Method
 

  1. Start by washing your head of broccoli thoroughly. Cut it into bite-sized florets, ensuring they are relatively uniform in size for even cooking.
  2. Place your griddle or skillet on medium-high heat. Allow it to get hot, which will help achieve that desirable char on the broccoli.
  3. Once the griddle is hot, add the olive oil or butter. Swirl it around to coat the surface evenly. If you’re using butter, let it melt completely before proceeding.
  4. Add the broccoli florets to the griddle in a single layer. Sauté them for about 3-4 minutes until they start to get a nice sear.
  5. Sprinkle the minced garlic over the broccoli and add the water. This will create steam, helping to cook the broccoli through without burning the garlic. Cover the griddle with a lid or a piece of aluminum foil for 2-3 minutes.
  6. After the broccoli has steamed, uncover it and sprinkle with salt and pepper. Stir to combine, letting it cook for another 1-2 minutes to ensure the garlic is fragrant and the broccoli is tender yet crisp.
