Ingredients
  

For the Crust:
  • 8 tablespoons butter melted
  • 1.5 cups graham cracker crumbs
  • 3 tablespoons sugar
For the Filling:
  • 2 large egg yolks
  • 1 can sweetened condensed milk 14 ounces
  • 0.5 cup key lime juice
  • to taste key lime zest optional

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs resemble wet sand.
  3. Step 3: Press the graham cracker mixture into the bottom and up the sides of each mini tartlet pan.
  4. Step 4: Bake the crusts in the preheated oven for about 10 minutes until golden brown. Allow to cool.
  5. Step 5: In a clean mixing bowl, whisk together egg yolks, sweetened condensed milk, and key lime juice until smooth.
  6. Step 6: Pour the key lime filling into each cooled tartlet crust.
  7. Step 7: Return the filled tartlets to the oven and bake for an additional 15 minutes until the filling is set.
  8. Step 8: Let the tartlets cool at room temperature, then refrigerate for at least 2 hours.
  9. Step 9: Garnish with key lime zest if desired before serving.
