Ingredients
  

  • 1 lb baby spinach
  • 2 tablespoons butter
  • 2/3 cup onion diced
  • 3 teaspoons garlic minced
  • 4 oz full-fat cream cheese
  • 1/2 cup unsweetened almond milk
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon sea salt

Method
 

  1. Start by heating the butter in a large skillet over medium heat. Once melted, add the diced onion and sauté for about 3-4 minutes, or until the onion becomes translucent. Then, stir in the minced garlic and cook for an additional minute until fragrant.
  2. Next, gradually add the baby spinach to the skillet. It may seem like a lot at first, but spinach wilts down significantly! Stir the spinach until it’s fully wilted, which should take around 3-5 minutes.
  3. Once the spinach is wilted, reduce the heat to low. Add the cream cheese to the skillet and stir it into the spinach mixture until it melts and combines smoothly.
  4. Pour in the unsweetened almond milk, stirring continuously until the mixture is creamy and well combined. If you prefer a thinner consistency, feel free to add a bit more almond milk until you reach your desired thickness.
  5. Sprinkle in the nutmeg and sea salt. Stir well to ensure the flavors are evenly distributed throughout the creamed spinach. Allow it to simmer for another minute or two on low heat, letting the flavors meld together.
  6. Remove the skillet from heat, and your Low-Carb Keto Creamed Spinach is ready to serve! This dish pairs perfectly with grilled chicken, steak, or even as a filling for a low-carb wrap.

  • For a dairy-free version, substitute the cream cheese with a nut-based cream cheese and use coconut milk instead of almond milk.
