Instructions:
- Start by patting the salmon fillets dry with a paper towel. This helps achieve a perfect sear. Season both sides with olive oil, dried Italian seasoning, Kosher salt, and cracked black pepper.
- In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, gently place the salmon fillets in the skillet. Sear for about 4-5 minutes on each side or until the salmon is golden brown and cooked through. Remove the salmon from the skillet and set it aside on a plate.
- In the same skillet, reduce the heat to medium and add 3 tablespoons of butter. Once melted, add 2 teaspoons of minced garlic and sauté for about 30 seconds until fragrant. Sprinkle in 3 tablespoons of flour, whisking continuously for about 1 minute to form a roux.
- Gradually whisk in 1 cup of chicken broth and then pour in ½ cup of heavy cream. Continue whisking until the mixture is smooth and begins to thicken.
- Stir in ½ cup of grated Parmesan cheese, ½ cup of drained sun-dried tomatoes, 1 teaspoon of dried Italian seasoning, and 1 teaspoon of lemon zest. Allow the sauce to simmer for about 2 minutes, stirring occasionally.
- Return the seared salmon to the skillet, spooning the creamy sauce over the top. Let it simmer for another minute to heat through.
- Transfer the Marry Me Salmon to plates, drizzling with extra sauce. Garnish with fresh basil leaves for a pop of color and flavor. Serve immediately and watch the magic happen!
Notes
- For a dairy-free option, substitute heavy cream with coconut cream and omit the Parmesan.
- If gluten-free, replace flour with a gluten-free blend or cornstarch to thicken the sauce.
- Salmon can be swapped with chicken breasts or tofu for a different protein choice.
