Ingredients

For the Salmon:
  • 4 fillets skinless salmon
  • 1 tablespoon olive oil
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon Kosher salt
  • 1 teaspoon cracked black pepper
For the Creamy Sauce:
  • 3 tablespoons butter
  • 2 teaspoons garlic minced
  • 3 tablespoons flour
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ cup Parmesan grated
  • ½ cup sun-dried tomatoes drained
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon lemon zest
  • Fresh basil for garnish

Equipment

  • Skillet
  • Spatula
  • Measuring cups and spoons
  • Whisk

Method

Instructions:
  1. Start by patting the salmon fillets dry with a paper towel. This helps achieve a perfect sear. Season both sides with olive oil, dried Italian seasoning, Kosher salt, and cracked black pepper.
  2. In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, gently place the salmon fillets in the skillet. Sear for about 4-5 minutes on each side or until the salmon is golden brown and cooked through. Remove the salmon from the skillet and set it aside on a plate.
  3. In the same skillet, reduce the heat to medium and add 3 tablespoons of butter. Once melted, add 2 teaspoons of minced garlic and sauté for about 30 seconds until fragrant. Sprinkle in 3 tablespoons of flour, whisking continuously for about 1 minute to form a roux.
  4. Gradually whisk in 1 cup of chicken broth and then pour in ½ cup of heavy cream. Continue whisking until the mixture is smooth and begins to thicken.
  5. Stir in ½ cup of grated Parmesan cheese, ½ cup of drained sun-dried tomatoes, 1 teaspoon of dried Italian seasoning, and 1 teaspoon of lemon zest. Allow the sauce to simmer for about 2 minutes, stirring occasionally.
  6. Return the seared salmon to the skillet, spooning the creamy sauce over the top. Let it simmer for another minute to heat through.
  7. Transfer the Marry Me Salmon to plates, drizzling with extra sauce. Garnish with fresh basil leaves for a pop of color and flavor. Serve immediately and watch the magic happen!

Notes

  • For a dairy-free option, substitute heavy cream with coconut cream and omit the Parmesan.
  • If gluten-free, replace flour with a gluten-free blend or cornstarch to thicken the sauce.
  • Salmon can be swapped with chicken breasts or tofu for a different protein choice.
