Ingredients
  

  • 2 lbs cooked and shredded chicken
  • 1 teaspoon kosher salt (if using table salt, use only ¾ teaspoon)
  • ½ teaspoon ground black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 15 oz canned tomatoes and green chilies (Rotel)
  • 11 oz Doritos (any flavor, but Nacho is preferred)
  • 1 cup sour cream
  • 4 oz cream cheese (room temperature or microwaved for 20 seconds)
  • 10.5 oz cream of chicken soup
  • 15 oz canned black beans (drained and rinsed)
  • 15 oz canned corn (shoepeg or sweet kernel corn works best)
  • 8 oz shredded Mexican cheese blend (or shredded cheddar)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Pico de gallo (for garnish)

Method
 

  1. Start by preheating your oven to 350°F (175°C). This ensures that your casserole will cook evenly and thoroughly.
  2. In a large mixing bowl, combine the shredded chicken, kosher salt, black pepper, onion powder, garlic powder, can of tomatoes and green chilies, sour cream, cream cheese, cream of chicken soup, black beans, corn, cumin, and smoked paprika. Mix everything together until well combined.
  3. In your baking dish, spread half of the crushed Doritos evenly on the bottom. Then, spoon half of the chicken mixture over the Doritos, followed by a layer of shredded Mexican cheese. Repeat the layering with the remaining ingredients, finishing with a layer of cheese on top.
  4. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.
  5. Once the casserole is done, remove it from the oven and let it cool for a few minutes. Garnish with fresh pico de gallo before serving. Enjoy the delightful layers of flavors in every bite!
