Ingredients
  

  • 8 tablespoons unsalted butter softened at room temperature
  • 1 1/2 cups white cake mix
  • 1/4 cup white granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 tablespoon peppermint extract
  • 1/2 cup mini chocolate chips
  • Green gel food coloring as desired
  • 10 oz white chocolate wafers or chopped white chocolate
  • 2 tablespoons green sanding sugar for decoration

Method
 

  1. Gather all of your ingredients and equipment. Make sure the butter is softened to room temperature for easy mixing.
  2. In a large mixing bowl, combine the softened unsalted butter, white cake mix, and white granulated sugar. Use a spatula to mix until the ingredients are well combined and creamy.
  3. Next, add in the all-purpose flour and peppermint extract. Mix until fully incorporated. If you’d like a more vibrant green color, add a few drops of green gel food coloring and mix until you achieve your desired shade.
  4. Gently fold in the mini chocolate chips, ensuring they are evenly distributed throughout the mixture.
  5. Using a cookie scoop or tablespoon, scoop out portions of the mixture and roll them into balls. Place the formed truffles on a parchment-lined baking sheet. Once all the mixture is used, place the baking sheet in the refrigerator for about 30 minutes to firm up.
  6. While the truffles are chilling, melt the white chocolate wafers or chopped white chocolate in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until smooth.
  7. Remove the truffles from the refrigerator. Using a fork or toothpick, dip each truffle into the melted white chocolate, allowing any excess to drip off. Place the coated truffles back onto the parchment-lined sheet.
  8. While the chocolate coating is still wet, sprinkle the green sanding sugar on top of each truffle for a festive touch. Allow the truffles to set at room temperature or in the refrigerator until the chocolate hardens.
  9. Once the chocolate has completely set, your Mint Chocolate Chip Truffles are ready to be enjoyed. Serve them on a platter or package them up for a sweet gift!

Notes

  • Chill the truffle mixture longer if it's too soft to roll.
  • Be careful not to overheat the white chocolate; melt it gradually.
  • For a different flavor, use dark chocolate instead of white.
  • Store truffles in an airtight container in the refrigerator for up to two weeks.
  • These truffles freeze well for up to three months; just thaw in the refrigerator.
