Ingredients
  

  • 1 cup oil for frying
  • 4 pieces green plantains peeled and cut into 2.5 cm slices
  • 2 tablespoons minced garlic
  • 2 teaspoons salt

Method
 

  1. Begin by heating the oil in a large frying pan over medium-high heat. Once hot, carefully add the sliced green plantains and fry for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  2. In a mixing bowl, combine the fried plantains with the minced garlic and salt. Mash the mixture until it reaches a chunky yet cohesive consistency.
  3. While mashing the plantains, prepare the stewed shrimp according to your favorite recipe, ensuring they are well-seasoned and cooked through.
  4. To serve, mold the mashed plantains into a bowl shape on a plate and create a small well in the center. Spoon the stewed shrimp into the well. Garnish with additional minced garlic or parsley if desired.

Notes

  • Fry and mash plantains a few hours in advance; just reheat before serving.
  • Prepare stewed shrimp a day ahead and store in the refrigerator; reheat before serving.
  • Chop herbs or garlic in advance and store in an airtight container for easy assembly.
