Ingredients
  

For the Banana Bread:
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 12 ounces sour cream
  • 4 overripe bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 envelope whipped topping mix
  • 1 pinch salt

Method
 

Directions:
  1. Preheat your oven to 350°F (175°C) for even baking.
  2. Grease your loaf pan with vegetable oil or line with parchment paper.
  3. Mash the 4 overripe bananas in a large mixing bowl until smooth.
  4. Add the granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and sour cream. Mix well.
  5. In another bowl, whisk together the flour, baking soda, baking powder, whipped topping mix, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and stir gently with a spatula until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a cooling rack.

Notes

  • Use very ripe bananas for the sweetest flavor.
  • Do not overmix the batter to keep the bread light and fluffy.
  • Let the bread cool completely before slicing for best results.
