Ingredients
  

  • 10 large eggs
  • 1/2 cup low-fat milk
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup turkey sausage, chopped
  • 2 green onions, chopped
  • 1/4 cup diced yellow onion
  • 1/4 cup diced red bell pepper
  • Salt to taste
  • Black pepper to taste

  • Mixing bowl

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: Lightly grease each cup of the muffin tin with cooking spray or oil.
  3. Step 3: In a large mixing bowl, crack all the eggs and add the milk. Whisk until well combined and slightly frothy.
  4. Step 4: Stir in the cheeses, turkey sausage, green onions, yellow onion, and red bell pepper. Season with salt and pepper to taste.
  5. Step 5: Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
  6. Step 6: Bake for about 18-20 minutes, or until the omelets are set and lightly golden on top.
  7. Step 7: Allow to cool for a few minutes, then gently loosen the edges and pop them out.

Notes

  • Customize with seasonal vegetables like spinach or mushrooms.
  • These omelets can be stored in the fridge for up to 5 days.
  • Freeze individually wrapped for up to 3 months for easy breakfasts!
