Ingredients
  

  • 1 cup old-fashioned oats
  • 1/4 cup natural almond butter (or sunflower butter, or peanut butter)
  • 1/4 cup maple syrup (or date syrup, agave, or honey)
  • 1/4 cup finely diced almonds (blanched almonds work wonderfully)
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup mini chocolate chips (Enjoy Life Brand is recommended)

Method
 

  1. In a mixing bowl, start by adding 1 cup of old-fashioned oats and 1/4 cup of finely diced almonds. Stir them together until evenly mixed.
  2. Next, pour in 1/4 cup of natural almond butter and 1/4 cup of maple syrup. Don’t forget to add 1/2 teaspoon of pure vanilla extract as well. Using a spoon or spatula, mix everything together until well combined. The mixture should be sticky and hold together when pressed.
  3. Once your mixture is well combined, gently fold in the 1/4 cup of mini chocolate chips.
  4. With clean hands, take small portions of the mixture and roll them into balls about 1 inch in diameter. Place each ball on a baking sheet or plate lined with parchment paper.
  5. Once all the mixture is shaped into balls, place the baking sheet or plate in the refrigerator. Let the energy balls chill for at least 30 minutes.
  6. After chilling, your No-Bake Almond Energy Balls are ready to enjoy!

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • Freeze for longer storage, up to three months.
