Ingredients

  • 1 cup creamy peanut butter
  • ½ cup honey
  • 2 cups rolled oats
  • ½ cup mini chocolate chips
  • dash vanilla optional
  • dash salt optional

Equipment

  • Mixing bowl
  • Rubber spatula
  • 9x9 inch baking dish
  • Measuring cups
  • Microwave-safe bowl

Method

  1. In a microwave-safe bowl, combine the creamy peanut butter and honey. Heat in the microwave for about 30 seconds, then stir until well combined. If you’re using vanilla, add it to this mixture.
  2. In a large mixing bowl, add the rolled oats and mini chocolate chips. Pour the melted peanut butter and honey mixture over the dry ingredients, and stir with a rubber spatula until everything is evenly coated.
  3. Line a 9x9-inch baking dish with parchment paper for easy removal. Transfer the mixture into the dish and press it down firmly, ensuring an even layer throughout.
  4. Refrigerate the bars for at least 1 hour, or until they are firm enough to cut. This step is crucial for the bars to hold their shape.
  5. Once set, remove the bars from the dish using the parchment paper. Cut into squares or rectangles, and enjoy your delicious No-Bake Peanut Butter Oatmeal Bars!

Notes

  • Store bars in an airtight container in the refrigerator for up to a week.
  • Wrap each bar individually in plastic wrap for freezing; they'll last up to three months.
  • Experiment with different nut butters for variety.
