- Start by placing the chicken strips in a large mixing bowl. Pour the buttermilk over the chicken, ensuring all pieces are well-coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes, or up to overnight for maximum tenderness.
- In another bowl, whisk together the eggs. In a separate shallow dish, mix the breadcrumbs, grated parmesan, finely chopped herbs, salt, and pepper until well combined.
- Preheat your oven to 400°F (200°C). This ensures that your goujons will bake evenly and become beautifully golden.
- Remove the marinated chicken from the fridge. One by one, take the chicken strips out of the buttermilk, allowing excess to drip off. Dip each strip into the egg mixture, then coat thoroughly with the breadcrumb mixture. Place the coated goujons on a prepared baking sheet.
- Once all the chicken strips are coated, place the baking sheet in the preheated oven. Bake for 20-25 minutes, or until the goujons are golden brown and cooked through. You can flip them halfway for even crispiness.
