- In a blender or food processor, combine the chopped cilantro, garlic, 1/2 cup of olive oil, lemon juice, cumin, chili powder, salt, and pepper. Blend until smooth and set aside. This will be your spicy cilantro sauce.
- Pat the flat iron steaks dry with paper towels. Drizzle the remaining 2 teaspoons of olive oil over both sides of the steaks, then season generously with salt and pepper. If you love a bit more spice, feel free to sprinkle some additional chili powder on the steaks.
- Place your skillet over medium-high heat and let it get hot. You want it to be nice and hot so that the steaks sear properly.
- Once the skillet is hot, add the seasoned steaks. Sear them for about 4-5 minutes on one side without moving them. This will create a beautiful crust. Flip the steaks and cook for an additional 4-5 minutes for medium-rare, adjusting the time slightly based on your desired level of doneness.
- Remove the steaks from the skillet and place them on a cutting board to rest for at least 5 minutes. This allows the juices to redistribute, ensuring a juicy steak.
- Slice the steaks against the grain and drizzle the spicy cilantro sauce generously over the top. Serve immediately and enjoy the vibrant flavors!
