Ingredients
  

For the Salmon:
  • 2 filets center-cut salmon (about 2 inches thick)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 springs fresh thyme
  • 3 cloves garlic (smashed)
  • 1 tablespoon capers (drained)

Method
 

Instructions:
  1. Step 1: Prepare the Salmon - Pat the salmon filets dry with paper towels and season both sides with kosher salt and black pepper.
  2. Step 2: Heat the Skillet - Place your skillet over medium-high heat and add the olive oil. Heat until shimmering but not smoking.
  3. Step 3: Sear the Salmon - Place the salmon fillets skin-side down in the skillet and cook undisturbed for 5-6 minutes.
  4. Step 4: Add Butter and Aromatics - Reduce heat to medium, add butter, garlic, thyme, and capers. Baste with melted butter for 2-3 minutes.
  5. Step 5: Flip the Salmon - Gently flip the salmon and cook for another 2-3 minutes until cooked through.
  6. Step 6: Finish with Lemon Juice - Remove from heat and squeeze fresh lemon juice over the salmon.
  7. Step 7: Serve - Transfer to a plate, drizzle with remaining butter and aromatics, and serve immediately.

Notes

  • Don’t overcrowd the pan for crispy skin.
  • Ensure salmon is at room temperature before cooking.
  • Let salmon sear undisturbed for the best crust.
