Ingredients
  

For the Tilapia:
  • 4 ounce tilapia filets fresh or frozen (thawed) and patted dry
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon kosher salt
  • 1 tablespoon lemon pepper seasoning
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil avoid using extra virgin
  • ½ cup freshly shredded Parmesan cheese
  • ½ cup diced green onions optional
  • 1 lemon cut into wedges for serving

Method
 

Cooking Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. Pat the tilapia filets dry with paper towels.
  3. In a mixing bowl, combine the freshly grated Parmesan cheese, kosher salt, lemon pepper seasoning, and chopped fresh parsley. Mix well.
  4. Drizzle olive oil over the tilapia filets and rub it all over the fish.
  5. Press each filet into the Parmesan mixture, coating both sides.
  6. Place the coated tilapia filets on a baking sheet lined with parchment paper.
  7. Bake for about 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
  8. Sprinkle freshly shredded Parmesan cheese and diced green onions on top before serving with lemon wedges.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Reheat in a 350°F (175°C) oven for about 10 minutes to keep the crust crispy.
  • Experiment with different cheeses for a unique flavor.
