Ingredients
  

For the Crust:
  • 3 cups graham cracker crumbs
  • 1/3 cup unsalted butter melted
For the Filling:
  • 6.8 oz pistachio pudding mix
  • 2 3/4 cups whole milk
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 16 oz whipped topping divided
  • 1/4 cup M&Ms (red and green)

Method
 

Instructions:
  1. In a medium bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until the crumbs are evenly coated, resembling wet sand. Press the mixture firmly into the bottom of a 9x13 inch baking dish to create a solid crust.
  2. In a large bowl, whisk together the pistachio pudding mix and whole milk until well combined. Let it sit for about 2 minutes to thicken up.
  3. In another bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.
  4. Gently fold in 8 oz of the whipped topping into the cream cheese mixture until well combined. Then, add this mixture to the thickened pistachio pudding. Stir until everything is incorporated.
  5. Spread half of the pistachio filling over the graham cracker crust. Then add a layer of whipped topping on top of the filling. Repeat this process with the remaining filling and top it all off with the remaining whipped topping.
  6. Sprinkle the red and green M&Ms on top for a festive touch. You can arrange them in a pattern or just scatter them for a fun look.
  7. Cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours, or overnight if you can wait! This chilling time allows the layers to set perfectly. When ready to serve, cut into squares and enjoy!

Notes

  • Be sure your cream cheese is softened before mixing; this will prevent lumps in the filling.
  • For the best flavor, use a high-quality pistachio pudding mix.
  • Letting the dessert chill overnight enhances the flavors and makes it easier to cut into neat squares.
