Instructions:
- In a medium bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until the crumbs are evenly coated, resembling wet sand. Press the mixture firmly into the bottom of a 9x13 inch baking dish to create a solid crust.
- In a large bowl, whisk together the pistachio pudding mix and whole milk until well combined. Let it sit for about 2 minutes to thicken up.
- In another bowl, beat the softened cream cheese and powdered sugar with an electric mixer until smooth and creamy.
- Gently fold in 8 oz of the whipped topping into the cream cheese mixture until well combined. Then, add this mixture to the thickened pistachio pudding. Stir until everything is incorporated.
- Spread half of the pistachio filling over the graham cracker crust. Then add a layer of whipped topping on top of the filling. Repeat this process with the remaining filling and top it all off with the remaining whipped topping.
- Sprinkle the red and green M&Ms on top for a festive touch. You can arrange them in a pattern or just scatter them for a fun look.
- Cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours, or overnight if you can wait! This chilling time allows the layers to set perfectly. When ready to serve, cut into squares and enjoy!
