Cuisine: American

Ingredients

  • 8 ounces chopped semi-sweet chocolate
  • 2 teaspoons coconut oil
  • 96 pieces square-shaped pretzels also called pretzel snaps
  • 24 pieces regularly-sized marshmallows
  • ½ cup creamy peanut butter do not use the natural kind that must be refrigerated
  • finely crushed graham cracker crumbs (2-3 sheets will be plenty)

Equipment

  • Microwave-safe bowl
  • Baking sheet
  • Parchment paper
  • Spatula

Method

  1. Gather all your ingredients and kitchen gear. Line a baking sheet with parchment paper, making sure it’s ready for the delicious assembly.
  2. In a microwave-safe bowl, combine the chopped semi-sweet chocolate and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
  3. Place 48 pretzel snaps on the lined baking sheet. This will be the base of your bites. Ensure they are spaced out enough to allow for easy handling.
  4. Scoop a teaspoon of creamy peanut butter onto each pretzel snap. Use a spatula to gently spread it out, ensuring it covers the surface.
  5. Place one marshmallow on top of each peanut butter-covered pretzel. Gently press down so they stick together.
  6. Using a spoon or a piping bag, drizzle the melted chocolate mixture over the marshmallows and pretzels, ensuring each bite is generously coated.
  7. Before the chocolate sets, sprinkle finely crushed graham cracker crumbs over the top of each bite for that classic s’mores flavor.
  8. Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has fully set.

Notes

  • For a more decadent treat, consider adding a layer of caramel sauce before drizzling the chocolate.
  • If you have leftovers, these bites can be stored for several days in an airtight container.
  • These bites can be made a day or two in advance; just store them in an airtight container to keep them fresh.
