Ingredients
  

  • 4 pieces Boneless Skinless Chicken Breasts
  • 1/2 cup Mayonnaise light version if preferred
  • 2 tablespoons Lemon Juice fresh or bottled
  • 1 cup Crushed Ritz Crackers
  • 1/2 cup Parmesan Cheese grated
  • 1 teaspoon Dried Basil

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. Step 2: Pound the chicken breasts between plastic wrap to about ½ inch thick.
  3. Step 3: Mix mayonnaise and lemon juice in one bowl; in another, combine crushed crackers, Parmesan, and basil.
  4. Step 4: Coat each chicken breast in the mayonnaise mixture, then press into the cracker mixture.
  5. Step 5: Bake on a parchment-lined baking sheet for 25-30 minutes until cooked through and golden.
  6. Step 6: Let rest for a few minutes before serving with your favorite sides.

Notes

  • For an extra crispy coating, broil for the last 2-3 minutes.
  • Use leftover cracker coating on roasted vegetables for added crunch.
  • Experiment with seasonings like garlic or onion powder.
