Ingredients

  • 1 tablespoon olive oil
  • 10 oz fresh spinach
  • 2 cloves fresh garlic pressed
  • Salt and pepper to taste

Equipment

  • Large skillet
  • Wooden spoon or spatula
  • Measuring spoons
  • Garlic press

Method

  1. In your large skillet, heat 1 tablespoon of olive oil over medium heat. Allow the oil to warm up for about 1 minute until it shimmers.
  2. Once the oil is hot, add the 2 cloves of pressed garlic to the skillet. Sauté for about 30 seconds or until the garlic is fragrant but not browned.
  3. Carefully add the 10 oz of fresh spinach to the skillet. Use your wooden spoon or spatula to stir the spinach, ensuring it gets coated in the garlicky oil.
  4. Continue to sauté the spinach for 2 to 3 minutes, stirring frequently until it wilts down significantly.
  5. Once the spinach is wilted and tender, season it with salt and pepper to taste. Stir well to ensure the seasonings are evenly distributed.
  6. Remove the sautéed spinach from the heat and transfer it to a serving dish. Enjoy this fresh side while it’s warm.

Notes

  • Overcooked spinach can become mushy; watch it closely.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Add a squeeze of lemon juice for extra brightness.
