  • 1/2 cup water
  • 1/2 teaspoon kosher salt
  • 1 tablespoon pure maple syrup or granulated sugar for substitution
  • 1/3 cup scallions chopped, use white and pale green parts
  • 2 cups white jasmine rice rinsed
  • 2 tablespoons sliced green parts of scallions for garnish

Method
 

Instructions
  1. 1. Rinse the rice under cold water until the water runs clear.
  2. 2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and maple syrup. Stir gently.
  3. 3. Cook over medium heat, bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
  4. 4. Remove from heat and let it sit covered for 10 minutes. Fluff with a wooden spoon and fold in the chopped scallions.
  5. 5. Transfer to a serving dish and garnish with sliced scallion tops. Serve warm.
