Ingredients
  

For the Salmon and Vegetables:
  • 4 6 oz salmon fillets fresh or frozen, thawed
  • 1 lb fresh green beans
  • 2 cups carrots cut into 2-inch pieces
  • 1 Tbsp olive oil
  • to taste Salt and pepper
For the Marinade:
  • 1/4 cup reduced-sodium soy sauce
  • 2 Tbsp sweet chili sauce
  • 1 Tbsp honey
  • 1 Tbsp grated ginger
  • 2 cloves garlic minced
  • 1 Tbsp chopped green onions for garnish

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 400°F (200°C). This temperature is ideal for roasting the salmon and vegetables to perfection.
  2. Step 2: In a mixing bowl, combine the reduced-sodium soy sauce, sweet chili sauce, honey, grated ginger, and minced garlic. Whisk the ingredients together until well blended.
  3. Step 3: Place the salmon fillets in a shallow dish or a resealable bag. Pour half of the marinade over the salmon, ensuring that each fillet is well-coated. Allow the salmon to marinate for about 15-30 minutes.
  4. Step 4: While the salmon marinates, wash and trim the green beans. Peel and cut the carrots into 2-inch pieces. In a large bowl, toss the green beans and carrots with olive oil, salt, and pepper to taste.
  5. Step 5: On a large sheet pan, spread out the marinated salmon fillets in the center. Surround the salmon with the seasoned green beans and carrots, arranging everything in a single layer.
  6. Step 6: Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Step 7: In the last 5 minutes of baking, drizzle the remaining marinade over the salmon and vegetables for added flavor. Once done, remove from the oven and let it rest for a couple of minutes. Garnish with chopped green onions before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a 350°F (175°C) oven covered with foil to prevent drying out.
  • Feel free to customize the vegetables based on what you have on hand!
