Ingredients

For the Beef:
  • 1 pound flank steak or tenderloin thinly sliced
  • 1 tablespoon flour or gluten-free flour
  • 2 tablespoons sesame or olive oil
  • 1/2 cup tamari or soy sauce
  • 3 tablespoons maple syrup or honey
  • 2-3 tablespoons Gochujang for spiciness
  • 4 cloves garlic chopped
  • 2 tablespoons ginger juice from pickled ginger jar
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons sesame seeds for topping
  • 1/3 cup pickled ginger patted dry
  • 2 shallots sliced
  • 3 cups broccoli florets
  • 3 Persian cucumbers sliced
  • 1/4 cup chopped green onions for garnish
  • black pepper to season
  • chili flakes optional
  • salt to taste

Equipment

  • Sheet Pan
  • Mixing bowls
  • Sharp Knife
  • Measuring cups and spoons
  • Spatula or tongs

Method

Instructions:
  1. Start by slicing your flank steak or tenderloin thinly against the grain for tenderness. In a mixing bowl, combine the sliced beef with black pepper and flour, tossing until well coated.
  2. In another bowl, whisk together tamari or soy sauce, maple syrup or honey, Gochujang, chopped garlic, and ginger juice. Add the coated beef to this marinade and allow to marinate for at least 15 minutes.
  3. Preheat your oven to 425°F (220°C). This high temperature will help caramelize the beef and roast the broccoli perfectly.
  4. On your sheet pan, spread out the broccoli florets and sliced shallots. Drizzle with sesame or olive oil and a pinch of salt, tossing to coat evenly.
  5. Add the marinated beef to the sheet pan, distributing it evenly over the vegetables. Top with pickled ginger.
  6. Place the sheet pan in the preheated oven and roast for about 15-20 minutes, or until the beef is cooked through and the broccoli is tender.
  7. Once roasted, remove the pan from the oven and drizzle with toasted sesame oil. Sprinkle with sesame seeds and toss everything together gently.
  8. Serve hot, drizzled with spicy mayo, garnished with sliced cucumbers and green onions. Add chili flakes for extra heat if desired!

Notes

  • Marinate the beef for at least 15 minutes for maximum flavor.
  • Feel free to swap broccoli for your favorite vegetables like bell peppers or snap peas.
  • This dish pairs excellently with steamed rice or quinoa.
