Ingredients
  

  • 1 pound lean ground turkey
  • 12 ounces salsa
  • 1 medium onion finely chopped
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 1 cup reduced-fat cheddar cheese
  • 3 whole whole-wheat tortillas 8-inch, cut into small pieces
  • 1 large avocado diced (for topping, optional)
  • 1 large tomato diced (for topping, optional)

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure it’s ready for your casserole once it’s assembled.
  2. In a large skillet over medium heat, add the lean ground turkey and cook until browned, breaking it apart with a spoon as it cooks. After about 5 minutes, add the finely chopped onion and sauté until the onion becomes translucent.
  3. Sprinkle in the cumin, cayenne pepper, black pepper, and sea salt. Stir everything together and let it cook for another minute to allow the spices to bloom.
  4. Pour in the salsa and mix it well with the turkey and onion mixture. Allow it to simmer for 2-3 minutes, letting the flavors meld together.
  5. In a large baking dish, start layering the ingredients. Begin with half of the tortilla pieces at the bottom, followed by half of the turkey mixture. Sprinkle half of the reduced-fat cheddar cheese on top. Repeat these layers with the remaining tortillas, turkey mixture, and cheese.
  6. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Once your casserole is out of the oven, let it cool for a few minutes. Top it with diced avocado and fresh tomatoes for an extra burst of flavor and nutrition.

Notes

  • For a vegetarian option, replace ground turkey with plant-based ground meat.
  • Customize spice levels by choosing mild salsa or adjusting cayenne pepper.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
