Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup spreadable peanut butter (not natural)
  • 2/3 cup light brown sugar packed
  • 1/2 cup white granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose or plain flour
  • 1/2 teaspoon baking powder
  • 1/3 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips or dark chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened unsalted butter and spreadable peanut butter. Beat until creamy.
  3. Add the packed light brown sugar, granulated sugar, and pure vanilla extract. Mix until light and fluffy.
  4. Add the large egg and beat on low speed until fully combined.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add to the wet mixture, mixing until just combined.
  6. Fold in the semi-sweet chocolate chips until evenly distributed.
  7. Using a cookie scoop, portion out the dough onto a baking sheet lined with parchment paper, leaving 2 inches of space between cookies.
  8. Bake for 10-12 minutes, until the edges are golden brown and the centers are soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
