  • 2 cups sugar
  • 1.5 teaspoons vanilla extract
  • 3 large eggs
  • 2 tablespoons buttermilk
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, combine the softened butter and sugar. Beat with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  4. Incorporate the buttermilk into the mixture, mixing on low speed until combined.
  5. In a separate bowl, whisk together the all-purpose flour and baking soda. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto lined baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a cooling rack.
