Ingredients
  

  • 6 ounces raw chorizo
  • 8 ounces queso blanco or white American cheese, grated
  • 1 small (5 oz) can evaporated milk
  • 1/4 cup whole milk
  • 2 tablespoons diced green chiles
  • 1 tablespoon chopped pickled jalapeños
  • to taste cilantro for garnish
  • as needed tortilla chips for serving

Method
 

  1. Begin by heating your skillet over medium heat. Add the raw chorizo, breaking it apart with your spatula. Cook until it’s browned and fully cooked through, about 5-7 minutes. Make sure to drain any excess fat if necessary.
  2. Once the chorizo is cooked, reduce the heat to low. Add the grated queso blanco or white American cheese, the evaporated milk, and the whole milk. Stir continuously until the cheese melts and the mixture is smooth and creamy.
  3. Mix in the diced green chiles and chopped pickled jalapeños. Taste and adjust the spice level according to your preference. If you like it spicier, feel free to add more jalapeños!
  4. Transfer your Spicy Chorizo Queso Dip to a serving bowl. Top with chopped cilantro for a fresh touch. Serve immediately with tortilla chips for dipping.

Notes

  • For a leaner option, swap raw chorizo for turkey chorizo.
  • You can use a mix of mozzarella and cheddar if queso blanco is unavailable.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
