Once the chorizo is cooked, reduce the heat to low. Add the grated queso blanco or white American cheese, the evaporated milk, and the whole milk. Stir continuously until the cheese melts and the mixture is smooth and creamy.
Mix in the diced green chiles and chopped pickled jalapeños. Taste and adjust the spice level according to your preference. If you like it spicier, feel free to add more jalapeños!
