- Start by brewing 1 cup of your favorite espresso or strong coffee. If you don’t have an espresso machine, a French press or a drip coffee maker will work just fine.
- In a saucepan, heat 2 cups of milk over medium heat. Stir occasionally to prevent it from scorching. Once it's hot (but not boiling), remove it from the heat.
- Stir in 4 tablespoons of sugar-free caramel sauce and 1 teaspoon of vanilla extract into the heated milk. Mix well until everything is combined and smooth.
- In a mixing bowl, combine 1 cup of chilled heavy whipping cream, 3 tablespoons of confectioners sugar, a pinch of salt, and 1 teaspoon of vanilla extract. Using a whisk or an electric mixer, whip the mixture until soft peaks form.
- In a large mug, pour the brewed espresso or strong coffee, then add the caramel-infused milk mixture. Stir gently to combine.
- Generously dollop the whipped cream on top of your latte. Drizzle additional sugar-free caramel sauce over the whipped cream and sprinkle with golden sugar if desired.
