Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add the chorizo. Break it up with a wooden spoon and cook until browned and cooked through, about 5-7 minutes. Drain any excess grease.
Add the sliced green bell pepper and red onion to the skillet with the chorizo. Sauté for about 3-4 minutes, or until the vegetables are softened.
In a large mixing bowl, combine the cooked chorizo and vegetables, marinara sauce, canned tomatoes, tortellini, sliced pepperoni, and sliced olives. Mix until everything is well combined.
Transfer half of the tortellini mixture into the prepared baking dish. Sprinkle half of the mozzarella cheese over the top. Then, add the remaining tortellini mixture and finish with the rest of the mozzarella on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
Allow the dish to cool for a few minutes before serving.
