Instructions:
  1. Step 1: Prepare the Chicken - Start by cleaning the chicken drumettes under cold running water. Pat them dry with paper towels. To create the lollipop shape, use a sharp knife to cut around the bone at the thinner end of each drumette, pushing the meat down toward the thicker end to form a lollipop shape.
  2. Step 2: Marinate the Chicken - In a large mixing bowl, combine the cornstarch, baking soda, and salt. Toss the chicken drumettes in this dry mixture until they are evenly coated.
  3. Step 3: Prepare the Glaze - In another bowl, whisk together the chili garlic sauce, honey, melted butter, soy sauce, and smoked paprika until well combined.
  4. Step 4: Coat the Chicken - Once the chicken is coated in the cornstarch mixture, add it to the bowl with the glaze. Toss the chicken until every piece is generously coated.
