Ingredients
  

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded low-fat mozzarella cheese
  • Nonstick spray
  • 2 6-inch white tortillas

Equipment

  • Nonstick skillet
  • Spatula
  • Measuring cups
  • Kitchen Towel

Method
 

  1. Gather all your shredded cheeses in a bowl and mix them together.
  2. Place your nonstick skillet over medium heat and allow it to warm up.
  3. Take one of your tortillas and lay it flat. Sprinkle about 1/3 cup of the cheese mixture onto the center.
  4. Fold in the sides of the tortilla and roll it up from the bottom to the top.
  5. Spray the skillet with nonstick spray. Place the rolled tortilla seam-side down into the skillet and cook for about 2-3 minutes until golden brown.
  6. Carefully flip the roll-up over and cook for another 2-3 minutes until the cheese is melted and the tortilla is crispy.
  7. Remove the roll-up from the skillet, let it cool for a minute, then slice it in half and serve warm.

Notes

  • Mix different cheeses for varied flavor!
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat in the oven for best texture.
