Ingredients
  

For the Taco Pasta:
  • 1/2 tablespoon olive oil
  • 1 small onion chopped
  • 1 pound lean ground turkey or ground beef
  • 3 cloves garlic minced
  • 8 oz tomato sauce
  • 1/4 cup water
  • 1 tablespoon ground chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 oz mild green chiles
  • 10 oz medium pasta shells
  • 1 1/2 cups shredded Mexican blend cheese or cheddar cheese

Method
 

Step-by-Step Instructions:
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, approximately 3-4 minutes.
  2. Add the lean ground turkey or ground beef to the skillet. Cook until browned, about 5-7 minutes.
  3. Stir in the minced garlic, ground chili powder, cumin, smoked paprika, oregano, kosher salt, and black pepper. Cook for an additional 1-2 minutes.
  4. Pour in the tomato sauce, water, and mild green chiles. Stir well to combine and bring to a simmer for about 5 minutes.
  5. In a separate pot, bring salted water to a boil. Add the medium pasta shells and cook until al dente. Drain in a colander.
  6. Add the drained pasta shells to the skillet with the sauce. Stir gently to combine.
  7. Sprinkle the shredded cheese over the Taco Pasta. Cover and let it cook on low heat until the cheese melts, about 3-5 minutes.
