Tahini Brownies

Ingredients
  

  • 1 can black beans (drained and rinsed)
  • 2 tbsp cocoa powder
  • 2 tbsp Dutch cocoa powder (or additional regular cocoa powder)
  • 1/3 cup flour (white, spelt, oat, almond, sorghum, etc.)
  • 1/3 cup tahini
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup sugar (for refined-sugar-free, make Black Bean Brownies)
  • 1/2 cup chocolate chips (not optional)
  • 1-2 tbsp additional tahini (for decoration, optional)

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures your brownies will bake evenly and come out perfectly fudgy.
  2. Lightly grease an 8x8 inch baking dish with non-stick spray or line it with parchment paper for easy removal.
  3. In a food processor, combine the drained black beans and tahini. Blend until you achieve a smooth and creamy consistency. This mixture forms the base of your brownies.
  4. To the black bean and tahini mixture, add cocoa powder, Dutch cocoa powder, flour, vanilla extract, baking powder, salt, baking soda, and sugar. Blend again until all ingredients are well combined.
  5. Using a spatula, fold in the chocolate chips until evenly distributed throughout the batter. This will give your brownies those delicious melty pockets of chocolate.
  6. Pour the brownie batter into your prepared baking dish. Use the spatula to spread it evenly and smooth out the top.
  7. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
  8. Once baked, remove the brownies from the oven and let them cool in the baking dish for about 10-15 minutes. Then, transfer them to a wire rack to cool completely. Cut into squares and enjoy! For an extra touch, drizzle with additional tahini before serving.

Notes

  • Don't skip the chocolate chips! They add essential flavor and texture.
  • Be careful not to over-bake. Brownies should be fudgy, not dry.
  • Make sure to blend the black beans well for the best texture.
  • Allow the brownies to cool completely before cutting to prevent crumbling.
