Ingredients

  • 1 cup tahini
  • ½ cup fresh lemon juice
  • 6 tablespoons water
  • 1 small garlic clove, grated or pressed
  • 1 teaspoon sea salt
  • Maple syrup or honey, as needed
  • Extra-virgin olive oil, as needed Optional, for added richness

Equipment

  • Mixing bowl
  • Whisk or fork
  • Measuring cups and spoons
  • Garlic press or grater

Method

  1. In a mixing bowl, add 1 cup of tahini, ½ cup of fresh lemon juice, 6 tablespoons of water, and the grated or pressed garlic clove.
  2. Using a whisk or fork, mix the ingredients together until the tahini is completely blended with the other components. The mixture may become thick initially, but keep whisking.
  3. If the sauce is too thick for your liking, slowly add more water, one tablespoon at a time, whisking until you reach your desired consistency.
  4. Add 1 teaspoon of sea salt and a drizzle of maple syrup or honey, if you prefer a sweeter flavor. Taste and adjust the seasoning as needed.
  5. For extra richness, consider adding a drizzle of extra-virgin olive oil and whisking again until well incorporated.

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • If the sauce thickens in the fridge, whisk in a little water to loosen it up before using.
  • For a nut-free alternative, use sunflower seed butter instead of tahini.
