Fold in the shredded Mexican blend cheese and chopped fresh cilantro into the bean mixture.
Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
Place a generous spoonful of the filling onto each tortilla and roll it tightly, tucking in the sides.
Heat enough canola oil in a large frying pan to cover the bottom over medium heat.
Once the oil is hot, carefully add the taquitos seam side down and fry in batches for 3-4 minutes on each side until golden brown.
Transfer the fried taquitos to a plate lined with paper towels to drain excess oil. Serve warm with dipping sauces.
