Ingredients
  

For the Meatballs:
  • 1 pound ground turkey
  • 1 cup bread crumbs or almond flour or ground oats (gluten free if needed)
  • 1 large egg
  • 1 clove garlic (finely minced or crushed)
  • 1 teaspoon ginger (grated fresh)
  • ½ teaspoon salt
  • ½ teaspoon red pepper flakes
For the Teriyaki Sauce:
  • ¾ cup soy sauce or tamari (gluten free, if needed)
  • ½ cup water
  • 2 tablespoons cornstarch or tapioca starch
  • 2 tablespoons honey
  • ¼ cup rice vinegar
  • ¼ cup pineapple juice (from a can of pineapple tidbits in 100% pineapple juice)
  • 1 clove garlic (finely minced or crushed)
  • 2 teaspoons ginger (grated fresh)
To Serve:
  • 1 cup drained pineapple tidbits
  • 1 pound broccoli or other vegetables (steamed)
  • 1 serving choice of rice, ramen noodles, cauliflower rice, or zoodles
  • 1 serving thinly sliced scallions (optional)

Method
 

Preparation Steps:
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, egg, minced garlic, grated ginger, salt, and red pepper flakes. Mix well.
  3. Form the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for about 20-25 minutes until cooked through and golden brown.
  5. While the meatballs bake, prepare the teriyaki sauce by whisking together soy sauce, water, cornstarch, honey, rice vinegar, pineapple juice, minced garlic, and grated ginger.
  6. In a small saucepan over medium heat, bring the teriyaki sauce mixture to a simmer, stirring frequently until thickened (about 5-7 minutes).
  7. Once the meatballs are done, toss them in the saucepan with the teriyaki sauce to coat.
  8. Prepare your choice of base (rice, noodles, etc.) and steam or microwave vegetables until tender.
  9. Serve meatballs over your base, drizzle with sauce, and add steamed vegetables on the side.

Notes

  • For a gluten-free option, use tamari instead of soy sauce.
  • Feel free to mix in different vegetables for added nutrition.
  • These meatballs freeze well; just thaw and reheat for a quick meal!
