Ingredients
  

For the Crust:
  • 1 large egg
  • 1 teaspoon water
  • 1 9-inch chocolate cookie pie crust
For the Filling:
  • 8 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1 cup peanut butter smooth
  • 1 teaspoon vanilla
  • 1 teaspoon salt
For the Topping:
  • 1 cup chocolate candy melts
  • 1 teaspoon coconut oil

Method
 

Instructions:
  1. Step 1: Prepare the Crust - Preheat your oven to 350°F (175°C). In a mixing bowl, combine the chocolate cookie crumbs with the large egg and water. Mix until the ingredients come together to form a dough. Press this mixture into the bottom and up the sides of a 9-inch pie dish. Bake the crust for about 10 minutes, then allow it to cool completely.
  2. Step 2: Make the Peanut Butter Filling - In a large mixing bowl, combine the softened cream cheese, powdered sugar, smooth peanut butter, vanilla, and salt. Use a hand mixer or stand mixer to beat the mixture until it’s creamy and well combined. This should take about 2-3 minutes.
  3. Step 3: Assemble the Pie - Once the crust is completely cooled, spread the peanut butter filling evenly over the crust. Use a rubber spatula to smooth the top, creating an even layer.
  4. Step 4: Prepare the Chocolate Topping - In a microwave-safe bowl, combine the chocolate candy melts and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth. Pour the melted chocolate over the peanut butter filling, spreading it evenly.
  5. Step 5: Chill and Serve - Refrigerate the pie for at least 4 hours, or preferably overnight, to allow it to set properly. When ready to serve, slice into pieces and enjoy the creamy, chocolatey goodness of The BEST Buckeye Pie!
