  • 2 cups super fine almond flour (not regular almond flour)
  • 5 tbsp tapioca flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tsp ground cinnamon (optional for warmth)
  • 1/2 tsp ground nutmeg (optional for depth of flavor)

Method
 

  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Prepare the Loaf Pan - Grease your loaf pan with coconut oil or line with parchment paper for easy removal.
  3. Step 3: Mash the Bananas - In a mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.
  4. Step 4: Mix in the Wet Ingredients - Add eggs, vanilla extract, and maple syrup to the mashed bananas and whisk until combined.
  5. Step 5: Combine the Dry Ingredients - In a separate bowl, whisk together almond flour, tapioca flour, baking powder, sea salt, cinnamon, and nutmeg.
  6. Step 6: Blend Wet and Dry Ingredients - Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
