For the Skillet:
  • 3 medium Potatoes peeled and sliced
  • 2 tablespoons Olive Oil
  • 1 medium Red Pepper chopped
  • 1 medium Green Pepper chopped
  • 1 medium Red Onion chopped
  • 1 cup Kielbasa sliced
  • 2 Eggs
  • 1 cup Shredded Mozzarella Cheese
  • Salt and Pepper to taste
  • Chopped Scallions for garnish

Cooking Instructions
  1. Start by peeling and slicing the potatoes into thin rounds. Chop the red and green peppers, and red onion into bite-sized pieces. Slice the kielbasa into rounds, ensuring everything is ready to go for a seamless cooking experience.
  2. Place your large skillet over medium heat and add 2 tablespoons of olive oil. Allow the oil to heat up until shimmering, which will help achieve that perfect golden color on the potatoes.
  3. Add the sliced potatoes to the skillet in a single layer. Season them with salt and pepper. Cook for about 8-10 minutes, flipping occasionally, until they are golden brown and tender.
  4. Once the potatoes are cooked, add the chopped red pepper, green pepper, and red onion to the skillet. Stir well to combine and cook for an additional 5-7 minutes until the vegetables soften and become fragrant.
  5. Add the sliced kielbasa to the skillet, mixing it in with the vegetables. Allow it to cook for another 5 minutes, allowing the kielbasa to heat through and develop a bit of a crispy edge.
  6. Using your spatula, create two small wells in the mixture. Crack an egg into each well, being careful not to break the yolk. Season the eggs with a sprinkle of salt and pepper.
  7. Sprinkle the shredded mozzarella cheese generously over the entire skillet, covering the eggs and vegetables. Reduce the heat to low, cover the skillet, and let it cook for about 5 minutes, or until the eggs are set to your liking and the cheese is melted.
  8. Once the eggs are cooked and the cheese is perfectly melted, remove the skillet from heat. Garnish with freshly chopped scallions for a pop of color and flavor. Serve hot, directly from the skillet, and enjoy!
