Ingredients

For the Filling:
  • 1 15-ounce can refried beans
  • 1/2 tablespoon olive oil
  • 1 small white onion, diced
  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 1 1/4 teaspoons ground cumin
  • 1 teaspoon paprika
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Kosher salt, to taste
  • 1/2 teaspoon ground black pepper
  • 1 14.5-ounce can diced tomatoes, drained
  • 12 tostada shells
  • 2 cups shredded lettuce
  • 1 tomato diced
  • 1 cup shredded cheddar cheese

Equipment

  • Large skillet
  • Wooden spoon or spatula
  • Measuring spoons and cups
  • Can opener
  • Serving platter

Method

Stepwise Method:
  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the lean ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes.
  3. Stir in the chili powder, ground cumin, paprika, garlic powder, onion powder, kosher salt, and ground black pepper. Mix well to combine the spices with the beef and onions.
  4. Add the drained diced tomatoes to the skillet and stir to incorporate them into the beef mixture. Allow it to simmer for an additional 2-3 minutes to meld the flavors.
  5. Place the tostada shells on a serving platter. Spread a generous layer of refried beans on each shell. Top with the beef mixture, followed by shredded lettuce, diced tomato, and shredded cheddar cheese.
  6. Serve the Tostadas immediately while the shells are crispy and the toppings are fresh. Garnish with additional toppings such as sour cream, guacamole, or salsa if desired.

Notes

  • Try different toppings for variety; avocado, radishes, or salsa are great options.
  • Assemble Tostadas fresh for the best texture.
  • Store leftover fillings separately to maintain crispness of the shells.
