Stepwise Method:
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the lean ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes.
- Stir in the chili powder, ground cumin, paprika, garlic powder, onion powder, kosher salt, and ground black pepper. Mix well to combine the spices with the beef and onions.
- Add the drained diced tomatoes to the skillet and stir to incorporate them into the beef mixture. Allow it to simmer for an additional 2-3 minutes to meld the flavors.
- Place the tostada shells on a serving platter. Spread a generous layer of refried beans on each shell. Top with the beef mixture, followed by shredded lettuce, diced tomato, and shredded cheddar cheese.
- Serve the Tostadas immediately while the shells are crispy and the toppings are fresh. Garnish with additional toppings such as sour cream, guacamole, or salsa if desired.
