- Step 1: Prepare the Medjool DatesStart by soaking the 15 pitted medjool dates in warm water for about 10 minutes. This softens them and makes them easier to blend.
- Step 2: Blend the Dates and Nut ButterIn a food processor, combine the soaked dates and 2 tablespoons of peanut butter or your choice of nut butter. Blend until smooth and creamy.
- Step 3: Mix the Dry IngredientsIn a large mixing bowl, add 2 cups of quick oats, 1 cup of chopped nuts or seeds, 3/4 cup of dried fruit and/or chocolate chips, 1 teaspoon of vanilla, and 1 teaspoon of cinnamon (if using). Stir until evenly mixed.
- Step 4: Combine Wet and Dry IngredientsPour the blended date mixture into the bowl with the dry ingredients. Add 3 to 4 tablespoons of maple syrup and 1/2 teaspoon of sea salt. Mix everything together until well combined.
- Step 5: Press into the PanTransfer the mixture into the lined baking pan. Using your hands or a spatula, press the mixture down firmly and evenly into the pan.
- Step 6: Chill and SetPlace the baking pan in the refrigerator for at least 2 hours to allow the bars to firm up. Once set, remove from the pan and cut into squares or rectangles.
Notes
- Store in an airtight container in the refrigerator for up to one week.
- Freeze individually wrapped bars for up to three months.
- For a nut-free version, use sunflower seed butter.
