In a large mixing bowl, combine 1 pound of lean ground turkey, 1/2 teaspoon of black pepper, and kosher or sea salt to taste. Stir until just combined to avoid overworking the meat.
Gently fold in 1/2 cup of diced sun-dried tomatoes, 1/2 cup of low-fat feta cheese, and 2 tablespoons of diced chives or green onions. Mix until the ingredients are evenly distributed throughout the turkey.
Divide the mixture into four equal portions and shape them into patties, about ¾ inch thick. Make a small indentation in the center of each patty to help them cook evenly.
Preheat your grill or skillet over medium heat. If using a skillet, consider adding a little olive oil to prevent sticking.
Place the patties on the grill or in the skillet. Cook for about 5-7 minutes on each side or until the internal temperature reaches 165°F.
Once cooked, remove the patties and let them rest for a few minutes. Serve on whole-grain buns with your favorite toppings such as lettuce, tomato, or avocado.
